Whisky Wonders at Café de l’Opera

Mark Twain once said, “too much of anything is bad, but too much good whisky is barely enough”. If you tend to agree with the 19th-century travel writer, then take yourself to Café de l’Opera this March to sample our seven signature whisky cocktails.

We have the classics – a smokey old fashioned and a butterscotch-sweetened whisky sour, and we have a few artistic creations inspired by the flavours of the East. Fragrant cardamom syrup adds a heady aroma to the smooth taste of Bushmills Original and fresh lemongrass and coriander compliments the hint of ginger in The Macallan 12 years old.

Wild Turkey 101 bourbon and Famous Grouse blended scotch also share the shelf, and what would a whisky menu be without egg whites and Angostura Bitters? The creative mix of flavours in our cocktails are designed for all tastes, whether you consider yourself a whisky connoisseur or not.

Hot Summer Lemonade by the Pool

Is there anything more sweet and nostalgic than a tall, cold glass of homemade lemonade? How about sipping one poolside in an exotic location after a day of exploring? Our selection of fruit lemonades is just the thing for a hot Saigon day.

Crafted in-house with fresh fruit juice and fruit purees, these refreshing lemonades provide a little sugar rush and plenty of hydration. Choose from sweet lychee and strawberry or tangy kiwi and passion fruit, as well as mango, watermelon, raspberry and pineapple and all mixed with top quality mineral water over ice.

Colourful Carnival – Rio edition!

A feast fit for a Queen at Caravelle

Jane Hunter Wine Dinner

This March, we’re excited to invite you to the first wine dinner of the year with First Lady of New Zealand Wine, Jane Hunter.

Born into a grape growing family, Hunter has gone on to claim an OBE and win numerous awards for her services to the wine industry. For the dinner, we will introduce you to 5 wines from her family winery in Marlborough, New Zealand.

The evening begins with a shrimp and crab salad, served with delicate squash blossoms and pickled vegetable spaghetti in a chilled tomato consommé. This is accompanied by a glass of Sauvignon Blanc from Hunter’s extensive white collection. Another salad follows with whipped goats cheese in a rainbow of tomato, beetroot and basil garnishes, paired with a crisp Riesling. The fresh fruit character of the final white, a Chardonnay, compliments a light Dover sole while your final savoury course of slow cooked beef belly is enjoyed with a rich and spicy Pinot Noir. Finish off with the classic taste of mint chocolate and toast with a coffee or tea to a night well spent.
